Why does the colour and texture of honey vary?

Honey is a natural product, influenced by seasonal and regional conditions. Some areas produce paler honey than others. Like a good wine, honey will grow in flavour and darken with age. 


Our honey can look a bit darker than others due to the fact that it's raw and not fine filtered, so it includes things like bee bread, pollen and wax particles which can add colour, and Manuka is a particularly dark variety of honey.
