Our delicious Raw Manuka honey is a highly viscous substance with a grainy, almost fudge-like texture - this is because we don't heat our honey above the naturally occurring temperatures in the hive, and we don't fine filter our honey either. All the naturally occurring properties like protein rich, bio-available beebread, wax particles and honey crystals stay whole and present so we can enjoy the benefits of this incredible raw, whole food.⁠

When our honey has been sitting, the particles all settle, and the honey gains a glossy surface. 


​Our honey is what is described as thixotropic. Materials that are thixotropic have a time-dependent, shear-thinning viscosity. In other words, as the material is placed under stress to flow, the longer the stress is applied, the lower the viscosity will be.

Thixotropy is important for applications that require the material to flow easily during dispensing but then must stay in place once they are dispensed. This allows materials to be dispensed in exact patterns and shapes without any sagging or slumping after application.

Nature provides us with such a delicious, nutrient rich product from our bees, that we don't want to alter it. We know that heating honey can destroy the naturally occurring goodies that come along with it, so instead of liquifying our honey to get it out of the comb faster, we take the more time consuming path by scraping off the wax caps of the honey comb and allowing the honey to ooze out - beebread, wax particles and all. Our honey has a grainy, almost fudge like texture which is due to it's raw, unpasturised nature.

Our product is 100% natural and as with any natural product, there will be variances in colour, flavour and texture. ⁠
